The Chocolate Plant and its Products

In this book theobroma cacao is covered from start to finish. The book has beautiful botanical etchings of a cacao tree and its fruit along with "receipts" written by Miss Parloa for items like icing and ice cream. An outline of chocolate's early history includes a quote from Thomas Gage who wrote a survey of the West Indies in 1648. He discusses the native term for chocolate and also gives a description of how it is produced.

"The name chocolate is an Indian name, and a compound from ate, as some say, or others, atle which in the Mexican language signifieth water, and from the sound which the water (wherein is put the chocolate) makes, as choco, choco, choco, when it is stirred in a cup by an instrument called a'molinet', or a 'molinillo', until it bubble and rise into a froath."
