This book is a compilation of two out of print titles: Cocoa and Chocolate: A Short History of Their Use, 1886 and The Chocolate Plant and Its Products, 1891. This edition includes wonderful photos of the Walter Baker & Company chocolate factory as well as cacao farms in West Indies and Ceylon. The Caribbean and Sri Lanka remain important growing regions for cacao.

The book starts with definitions of cocoa and chocolate in an effort to clear up confusion for the reader, "As even the standard dictionaries fail to give the exact meanings..."
