Essays on Cacao, Cocoa and Chocolate

These technical essays were written for cocoa bean buyers and traders in German with English translation. The book contains tables and charts of cacao beans. One such table shows high-grade Trinidad cacao nibs (both whole and split open) and describes in detail exactly how this superior grade bean should look. This guide would have been an important source for a cacao bean buyer, who was likely located in a factory office thousands of miles from where his product was grown, fermented and dried. The journal reviews cacao from various regions like Costa Rica, Brazil, San Tomé (São Tomé), and Africa's Gold Coast. Also included are advertisements for the Dresden, Germany machinery company, J. M. Lehmann. The illustrated advertisements show vintage chocolate and cocoa refiners along with other industrial chocolate and cocoa processing machines from that era including roasters and melangeurs.
