Cellar Bakeries and Their Dangers to Producers and Consumers: Stenographic Report of a Speech on Cellar Bakeries and Their Effects

Written by the health commissioner of Chicago and published by the Bakery and Confectionery Workers' Union this book covers the poor health conditions in cellar factories. In the preface the Union writes, "May it have the intended effect of creating a like successful agitation against unsanitary and unclean cellar-bakeries wherever it is read". The book claims that bakeries should be exposed to daylight as bread and pastries made in dark "dens would be as injurious to the community as the cellars themselves would be to the bakers who work in them." The Bakery and Confectionery Workers International Union of America was organized in 1886 and is one of the pioneers of the North American labor movement.
